Delightful Digestive Cookies
Looking for an everyday go-to cookie that you don’t have to feel guilty about enjoying to the fullest? Well, look no further. My friends and family love love love these guys. They are delightful digestive cookies for a reason. For one thing, they are easy to make, with the simplest of ingredients.
The spice combination is superb and you can eat as many as you’d like without feeling poopy afterwards. Yay! Doesn’t that sound delightful? They are easy on Agni and are the perfect nourishing treat. If you’ve got children they will also be celebrating your baking skills and you’ll be that parent who everyone is asking about in the schoolyards.
Because whole grains are sweet and grounding, they are perfect at keeping vata dosha pacified. It is not only enjoyable to include a baked grain good, it is also very satisfying, so you will not want to reach for a snack in between meals.
Detoxes and cleanses have become buzzwords for the health-conscious. These types of diets often focus on the consumption of extractive foods which primarily have bitter, pungent, and astringent tastes (think things like kale, spinach, and broccoli).
Eating too much extractive food will increase vata dosha, which can bring uncomfortable symptoms like constipation, dryness, anxiety, and the inability to focus.
For a balanced mind, body and lifestyle it is vital to enjoy not only extractive foods, but also augmenting foods that nourish, build, and sustain our tissues. Through my ayurvedic education and personal healing, I’ve learned of the 60:40 balanced bowl approach which changed my life. I recommend this avenue of whole-mind/body healing for all my clients and they are blossoming too because of it.
YOU’LL NEED:
1½ cups (220 grams) spelt flour, or wholewheat flour (plus more for rolling)
½ cup (60 grams) steel-cut oats (ground)
1 tablespoon of ground flax seed
1 teaspoon pink rock salt/mineral salt
4-6 tablespoons of maple syrup
1/4 cup + 2 tablespoons (80 grams) coconut oil (summer season as it is cooling), or ghee (fall through winter season)
5 - 8 tablespoons of water or herbal tea
1 teaspoon of vanilla
Spices-Cardamom 2 pods, ginger 1/4 tsp, clove 1/4 tsp, and cinnamon 1/2 tsp
HERE’S HOW:
Mix together all dry ingredients, melt oil or ghee on the stove for 2-3 minutes adding in the spices to wake up the medicines and your senses…oh the smells). Add vanilla and maple syrup to this beautiful mixture, then add to the dry ingredients. Marrying them together with your hands.
Roll into a large ball, then use a roller and a cookie cutter of your choice that speaks to you!
Preheat oven to 380°F and line a baking tray with oil so the cookies don’t stick and bake for 12-13 minutes. Et voilà! Happy healing happy eating!
